Chocolate Cherry Energy Balls

Ingredients
 1 cup gluten free rolled oats (or sub for oat flour)
 ¼ cup chocolate protein powder
 1 tbsp cacao powder
 ½ cup cashews
 ½ cup pecans
 ¼ cup maple syrup
 ¼ cup coconut oil, melted
  cup dried cherries, roughly chopped
  cup vegan chocolate chips (I use Lily's Semi-Sweet Baking Chips)
 pinch of salt

Add oats, protein powder, cacao powder, cashews, pecans and salt to a high-speed blender or food processor. Blend until completely combined.

Pour mixture into a medium-sized bowl. Add maple syrup and coconut oil. Mix to form a dough.

Add in chocolate chips and cherries, and mix.

Roll into 14 balls, and store in an air-tight container in the fridge or freezer.
