Fudgey Walnut Black Bean Brownies

Ingredients
 15 oz can black beans, drained and rinsed well
 ½ cup gluten free quick cooking oats
 ½ cup chocolate chips (plus more for topping)
 ½ cup walnuts, roughly chopped (plus more for topping)
 ½ cup maple syrup
 ¼ cup coconut oil, melted
 2 tbsp cocoa powder
 2 tsp vanilla extract
 ½ tsp baking powder
 ¼ tsp salt
Chocolate Drizzle (Optional)
 2 tbsp chocolate chips
 1 tsp coconut oil

Preheat oven to 350 degrees.

Grease an 8x8 baking pan and set aside.

In a food processor, add all ingredients besides chocolate chips and walnuts. Mix until well-combined and smooth.

Stir in the chocolate chips and walnuts by hand.

Pour into greased pan, and smooth with spatula. Top with extra chocolate chips and walnuts.

Bake for 18 minutes.

While baking, make the chocolate drizzle. Melt chocolate chips and coconut oil, and mix together until smooth.

Remove from oven, and allow to cool completely before cutting into 9 squares. Drizzle with chocolate glaze.

*Note* brownies are intended to be gooey, but you can place them in the fridge to firm up if needed.
