Healthy Apple Crisp

Yields6 Servings

 4-6 Honey Crisp apples, peeled and chopped (depending on size; can sub for Granny Smith or Pink Lady)
 1 tbsp maple syrup
 2 tbsp lemon juice
 1 tbsp water
 2 tsp cinnamon
Crumble Topping
 1 cup rolled oats, gluten free if desired
 ½ cup raw walnuts, chopped (can sub for pecans or almonds)
  cup almond flour
 ¼ cup maple syrup
 ¼ cup coconut oil (not melted; can sub for butter or ghee)
 1 tsp cinnamon
 ¼ tsp salt

Preheat oven to 350 degrees.


Add peeled and chopped apples to a bowl with maple syrup, lemon juice, water and cinnamon. Toss to coat apples completely.


Pour into a greased 8x8 or 9x9 baking dish (I used coconut oil spray).


To a bowl add all of the topping ingredients. Use your hands to mix until everything is well-combined and crumbly. Pour on top of apple mixture.


Bake for 45 minutes, covering halfway through with foil to avoid over-browning the crumble topping.


Best served warm with ice cream. Enjoy!
