Healthy Taco Pasta
1 box pasta of choice (I used Banza chickpea pasta), cooked according to package directions
1 lb ground turkey or ground beef
1 large red bell pepper (or 2 small), diced
1 small yellow onion, diced
1 can (15 oz) fire-roasted tomatoes
1 can (15 oz) corn, drained & rinsed
1 can (15 oz) black beans
1 can (4 oz - I used Trader Joe's brand) green chilis (optional)
1 packet taco seasoning (I used the spicy mix from Siete Foods)
1-2 garlic cloves, minced
2 tbsp avocado or olive oil
salt & pepper
toppings of choice (cilantro, sliced avocado, shredded cheese, etc)
To a large pot or dutch oven, add the oil over medium heat. Add bell pepper and onion, and cook for 3-4 minutes. Add in garlic, and cook for another minute.
Add in ground turkey or beef, and break into small pieces with your spatula. Cook until no pink remains (if using beef, I recommend draining the fat after this step).
Pour in corn, tomatoes, beans and hatch chilis, and mix to combine completely. Allow to simmer on low heat for 5 minutes.
Add in cooked pasta, and stir to incorporate.
Serve with toppings of choice. Enjoy!
