Oatmeal Chocolate Chip Cookie Granola

2 cups gluten-free rolled oats
1 cup dark chocolate chips
1 cup chopped almonds
¼ cup flax seeds
¼ cup coconut oil, melted
¼ cup maple syrup
1 tsp vanilla extract
2 tsp ground cinnamon
½ tsp salt
Preheat oven to 325 degrees.
In a large bowl, add all of the ingredients. Mix to combine well.
Spread evenly on a parchment-lined metal baking sheet.
Bake for 20-25 minutes until golden brown, stirring halfway through.
Remove from oven and allow granola to completely cool on countertop.
Store in an airtight container for up to 2 weeks.
