Pumpkin Pie Energy Balls

Ingredients
  cup pumpkin purée
 1 cup pitted dates, soaked in warm water for 5-10 minutes to soften
 ½ cup walnuts
 ½ cup pecans
 ¼ cup unsweetened, desiccated coconut
 1 tsp vanilla extract
 1 tsp pumpkin pie spice
 ½ tsp ground cinnamon
 pinch of salt

Add dates to a high speed blender or food processor. Blend until a paste forms.

Add pumpkin purée, pecans, walnuts, coconut, vanilla, pumpkin pie spice, cinnamon and salt.

Blend until well-combined and a smooth dough has formed.

Place mixture in the fridge for 30 minutes. Once chilled, scoop and roll into 10-11 balls.
