Sheet Pan Honey Mustard Salmon & Veggies

Yields4 Servings

 4 filets of salmon (about 4 oz each) - if serving 2 people, you can do 2 filets of salmon, and you'll have leftover veggies!
 1 large (or 2 small) heads of broccoli, cut into florets
 2 small red onions, cut into chunks
 2 sweet potatoes, cut into about 1/2 inch cubes
 2 tbsp avocado oil
 salt & pepper
Honey Mustard Sauce
 2 tbsp whole grain mustard
 2 tsp extra virgin olive oil
 2 tsp honey (more to taste if desired)
 2 tsp lemon juice
 ¼ tsp garlic powder
 pinch of salt & pepper

Preheat oven to 400 degrees.


To a large sheet pan (or two small sheet pans to dive this in half) add broccoli, red onions and sweet potatoes. Drizzle with olive oil, salt and pepper. Toss to coat completely.


Bake for 15 minutes.


To a small bowl, mix together mustard, olive oil, honey, lemon juice, garlic powder, salt and pepper.


Remove from the oven, and place salmon filets on the sheet pan.


Coat the salmon with the honey mustard mixture.


Place sheet pan back in the oven for an additional 15-18 minutes, until salmon is flaky and veggies are cooked through.


Serve, and enjoy!
